Chicken Vegetable Pakora

Ingredients:

  • 1 cup chickpea flour (besan)
  • 1/4 cup rice flour
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1 cup finely chopped mixed vegetables (onions, bell peppers, spinach, carrots, etc.)
  • 1/2 cup cooked and shredded chicken
  • 2-3 green chilies, finely chopped (optional)
  • Handful of fresh cilantro, chopped
  • Water as needed
  • Oil for deep frying

Instructions:

  • In a large mixing bowl, combine chickpea flour, rice flour, ginger-garlic paste, turmeric powder, coriander powder, cumin powder, garam masala, and salt. Mix well.
  • Add chopped mixed vegetables, shredded chicken, chopped green chilies (if using), and chopped cilantro to the flour mixture. Mix until all ingredients are well coated.
  • Gradually add water to the mixture, a little at a time, until you achieve a thick batter-like consistency. Ensure all vegetables and chicken are well coated with the batter.
  • Heat oil in a deep frying pan over medium-high heat.
  • Once the oil is hot, drop spoonfuls of the pakora batter into the oil, making sure not to overcrowd the pan.
  • Fry the pakoras in batches, turning occasionally, until they turn golden brown and crispy on all sides. This should take about 4-5 minutes per batch.
  • Once cooked, remove the pakoras from the oil using a slotted spoon and drain them on paper towels to remove excess oil.
