Chicken Soup


Ingredients:

  • 1 whole chicken (about 3-4 pounds), rinsed and giblets removed
  • 12 cups water or chicken broth
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 oz egg noodles or pasta of your choice (optional)
  • Fresh parsley, chopped (for garnish)


Instructions:

  • In a large pot, combine the whole chicken and water or chicken broth. Bring to a boil over medium-high heat.
  • Once boiling, reduce the heat to low and let the chicken simmer for about 1 to 1.5 hours, or until the chicken is cooked through and tender. Skim off any foam or impurities that rise to the surface.
  • Remove the chicken from the pot and let it cool slightly. Once cool enough to handle, shred the chicken meat into bite-sized pieces, discarding the skin and bones. Set aside.
  • In the same pot with the broth, add the sliced carrots, celery, diced onion, minced garlic, bay leaf, dried thyme, salt, and pepper. Bring the soup back to a simmer and cook for about 10-15 minutes, or until the vegetables are tender.
  • If using, add the egg noodles or pasta to the pot and cook according to the package instructions until al dente.
  • Once the noodles are cooked, return the shredded chicken to the pot and let it heat through for a few minutes. Taste the soup and adjust seasoning as needed with more salt and pepper.
  • Remove the bay leaf from the pot and discard it.
  • Serve the Chicken Soup hot, garnished with freshly chopped parsley for a burst of freshness.
